How to make Chocolate Chip Muffins

Ingredients

  • 100g granulated sugar
  • 50g brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 120ml vegetable oil
  • 2 large eggs
  • 180ml milk
  • 1 teaspoon vanilla extract
  • 250g all-purpose flour
  • 150g chocolate chips

Method

  1. Preheat your oven to 200°C and line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the vegetable oil, eggs, milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if there are a few lumps.
  5. Gently fold in the chocolate chips until evenly distributed throughout the batter.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean, with perhaps a few moist crumbs attached.
  8. Remove the muffins from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
